LEMON POUND CAKE RECIPE

From my post yesterday, I had to bake a lemon pound cake which was a TRUE hit. No, I am not tooting my own horn...well, OK I am! lol  I was asked to post the recipe. The recipe is actually  pieces of different recipes and I just took a chance of putting them together. Usually, when I bake I make a sample. I use a small ramekin just so I can know what it taste like. Here is the recipe. Hope you enjoy as well as my family did.

LEMON POUND CAKE    

3c. APF (all purpose flour)
3 sticks of butter (I use two sticks of butter and one stick of margarine)
6 eggs
3c. sugar
3/4c. Sprite soda (I wanted lemon-lime)
2TSP. lemon extract
1TSP. vanilla extract
lemon zest
splash of lemon juice

Cream butter and sugar together. Mix well until creamy. Beat one egg at a time. I put extracts into the 3/4c of sprite. Then I alternate sprite with the APF. I start with flour and end with flour. Add zest and lemon juice. Blend very well. Spray tube pan. Pour batter.

  Note: I don't have measurement for zest. Zest to your liking! I LOVE Lemon....I taste as I go along.


350F. 1 hour + 10-15 minutes. Check after an hour.

LEMON GLAZE

Squeeze two lemons or more. It depends on the juice. These two lemons were juicy. Add confectioners sugar until a creamy consistency. Whisk.
 Again, I don't have measurements. Add sugar little by little.

After cake is cooled, brush on the glaze.
